Just a lil’ veg salad 🥗 constructed in under 10 min over the weekend with ingredients from farmer’s 👩🏼‍🌾 market aka my “happy” place. A sharp 🔪 knife, fresh veg, good olive🌿 oil, vinegar and some fancy Maldon or 🌊 sea salt is all you need. Simple yet pleasurable 😘. Get into it, I promise, it’s feels so right and is sups healthy, yummmm. Happy Wednesday humanz 🙌🏼! Made these roasted veggies the other morning before heading out to work 👩🏼‍🏫. As you may know, I hate food waste 👎🏼, so I spent a little time pulling out veggies I had in my fridge and countertop and created this meal. Veggies were tossed with EVOO, dried oregano, dried parsley, paprika, garlic & onion powder, salt, white pepper and placed into over for 30 min at 350 degrees. I flipped em over once and fried them a bit afterwards to get a nice crisp in my awesome @anolon 🍳 skillet. I made this crack sauce with tahini, za’atar, lemon juice, garlic, honey, salt and white pepper. Garnished with sumac and Italian parsley and 💥 bam, lunch for the next few days.
